Perfect Turkey Gravy
Deep, glossy gravy from pan drippings (with make-ahead option).
Ingredients
- Pan drippings (fat separated) or 3 tbsp butter
- 3 tbsp flour
- 2–3 cups stock
- Salt & pepper
Instructions
- Skim fat from drippings; use 3 tbsp fat (or butter) in saucepan.
- Whisk in flour; cook 2 minutes for a roux.
- Gradually whisk in stock until smooth; simmer 5–10 minutes. Season to taste.
